Alternative pancake recipes

Pancakes. Say the word and you automatically associate it with the following toppings – golden syrup, nutella, jam. But this coming pancake day, why not try something new?

Pancakes are a gorgeously simple treat that can be made almost any time (the base being made up of the kitchen basics of flour, milk and eggs) but adding a few variables can turn it into something more excit

100g plain flour
Pinch of salt
2 eggs
200ml milk
50g unsalted butter

Love your morning coffee? Why not combine your daily pick me up with some baked goodies? These coffee pancakes are sure to wake you up.

You will need:

The essentials above, as well as:

2 tbs instant coffee
1 tsp baking powder
1/2 tsp bicarbonate of soda
1 tbs caster sugar

1) Mix the instant coffee with 2 tablespoons of boiling water and set aside to cool.
2) Sift the flour, baking powder and bicarbonate of soda into a bowl. Add the sugar and a pinch of salt.
3) In separate bowl, use a wooden spoon to beat the egg, milk, butter and coffee until combined. Add to dry ingredients and stir gently to combine.
4) Heat frying pan over medium heat and brush with some extra melted butter. Working in batches, add 1 tablespoon of batter to the pan for each pancake. Cook until bubbles form on the surface, then turn and cook for a further 1 minute or until golden.
5) Serve

Coming home from a hard day of work, you might be in need of something both sweet and alcoholic to cure what ails ya. These Guinness pancakes may be the answer. And even if it isn’t after work, it’s always 5pm somewhere 😉

You will need

The essentials above, as well as:

2 tsp. baking powder
2 tsp. caster sugar
1 tsp. cinnamon
150ml cup Guinness draft
1 tsp. vanilla

1) Combine flour, salt, baking powder, sugar and cinnamon into a large bowl.
2) Add the egg and butter to the dry ingredients. Whisk gently.
3) Add Guinness, vanilla, and milk to the batter. Whisk until blended.
4) Heat frying pan over medium heat and brush with some of the extra melted butter. Let the batter sit for about 2 minutes before flipping. Due to the carbonation in the beer, the pancakes will bubble more than usual, so this is not a reliable method for determining when to flip the pancakes. Cook the pancake on the other side for about a minute.
5) Serve

Who says pancakes should be restricted to the breakfast table? Food shouldn’t be discriminated into time guidelines – if I want to have a bacon bagel for dinner then I should be allowed to do so… and this recipe for pizza pancakes appears to agree with that sentiment.


You will need:

The essentials above, as well as:

75g shredded Italian (Pizza) cheese
25g grated Parmesan cheese
50g chopped pepperoni
2 tsp. Italian seasoning
1/4 tsp. garlic salt
Pizza sauce, for dipping

1) In a large bowl, combine the flour, Italian seasoning and garlic salt.
2) Combine eggs, butter and milk and stir into dry ingredients just until moistened. Fold in the cheeses and pepperoni.
3) Heat frying pan. Cook until bubbles form on top and edges are dry. Flip and cook until golden brown.
4) Cut pancakes with pizza cutter in to 4 triangles, garnish with Parmesan cheese, if desired.
5) Serve with pizza sauce for dipping.
